James Halliday … “Flametree, owned by the Towner family (John, Liz, Rob and Annie), has had extraordinary success since its first vintage in 2007. The usual practice of planting a vineyard and then finding someone to make the wine was turned on its head: a state-of-the-art winery was built, and grape purchase agreements signed with growers in the region. Show success was topped by the winning of the Jimmy Watson Trophy with its 2007 Cabernet Merlot. If all this were not enough, Flametree secured the services of winemaker Cliff Royle.”
From the winemaker: The 2016 season will be remembered as another warm vintage with unseasonal rainfall in January. Even though the days were warm we experienced cool southerly winds and night temperatures below normal, this resulted in some of the most structured and aromatic wines we’ve seen in many years.
The 2016 Embers Sauvignon Blanc was blended from three vineyards in the Wallcliffe and Karridale sub-regions of Margaret River. The great thing about sourcing fruit from several vineyards and sub regions is that you get fruit with a larger range of flavours and can ultimately blend more complex and interesting wines.
The 2016 Embers Sauvignon Blanc was tank fermented in separate vineyard batches, blended and then held on yeast lees for a few months in order to add greater texture to the mid palate. 10% of the 2016 Embers Sauvignon Blanc was fermented in French oak, this would normally only be reserved for our SRS SB however we decided not to make SR SB in 2016. The wine was then fined, filtered and bottled in August.
The nose on the 2016 Embers Sauvignon Blanc shows plenty of varietal fruits in the kiwi fruit, lemon grass, passionfruit and lime spectrum. Cool nights, a hallmark of the vintage, has harnessed plenty of fresh, crunchy fruits and wonderful crisp acidity. The 2016 Embers Sauvignon Blanc is a versatile wine that could be enjoyed as an aperitif or with almost any modern food of your choice.
