Babo wines are made by Australian Justin Bubb (an honorary Italian having spent the last six years making wine in Italy and who splits his time between Tuscany and Tasmania at Pooley Wines) with the idea of utilising the best fruit possible to produce wines of elegance and purity with a focus on vibrancy of fruit, texture and balanced complexity. All the wines are made at a small wine making facility in Empoli.
All of these wines are very well made while still speaking clearly of their origins. They offer exceptional value, and are bottled under screwcap. The BABO philosophy is simple. Source the finest regional fruit from Italy, to produce wines of elegance and purity with a focus on vibrancy, texture and balanced complexity.
There are a couple of firsts here; this is the first Chianti to be bottled under screwcap and it’s one of the first to be bottled in a Burgundy bottle as opposed to the traditional Claret shape. The Sangiovese is sourced from Empoli to the west of Florence, from a vineyard about 10 years of age and south-west facing. Justin has employed whole berry fermentation with roughly 50% carbonic maceration, simply fermented and then raised in concrete vats for six months. The second ferment is destemmed fruit; pressed out and matured in cement vats for 8 months.
This is Justin’s Italian take on Cru Beaujolais. ‘Italian Beaujolais’ strikes us as about right; it’s wonderfully bright and aromatic Sangiovese with notes of raspberry and red cherry, good texture and lightweight tannins, with sappy acidity and a thirst quenching finish. Medium weight chiantis don’t get much better. Viva italia!
