Barely in his 30s, Aurélien Laherte farms all of his family’s (astonishing) 75 parcels of vines biodynamically or organically. These sites are mostly scattered across the hills south of Épernay. Through microscopic attention to detail, hand harvesting and exemplary wood based élevage, Laherte has put this part of Champagne back on the grower map. All of his wines are naturally fermented with wild yeast with no additions and are hand disgorged with very low dosage.
The pure, punchy, Ultradition is a blend of 60 per cent Pinot Meunier, 30 per cent Chardonnay and 10 per cent Pinot Noir from parcels across the Coteaux Sud d’Épernay, Vallée de la Marne and Côte des Blancs. Aurélien Laherte ferments the wines in a mix of foudres, tanks and barrels, with regular stirring of the lees. Current blend is based on the 2010 and 2011 harvest with 40 per cent reserve wine enhancing the wine ‘s depth and spice like complexity. It ‘s a super value grower wine delicious and packed with flavour, textured and incisive with assertive, pure (red fruit, apple and exotic spice) flavours and lively, terrific length.
