Description
The wines of Clare Wine Co are all about regionality and pure flavours – the taste of Clare. Clare Wine Co was established in 2008 by premium Barossa producer Kaesler Wines. Winemakers from Kaesler, Stephen Dew and Reid Bosward are responsible for producing the wines under the Clare Wine Co brand. Varieties focused on are riesling, shiraz and cab sauvignon. The vineyards were carefully selected due to their unique soil formations and the micro climates found in the respective vineyards.
The Cabernet Sauvignon fruit to make this wine was sourced from both the Watervale & Polish Hill vineyards. Fruit was picked and then transported to Kaesler in the Barossa Valley for processing. The wine was fermented at a medium temperature (26-30 Degrees centigrade) in stainless steel and transferred to mainly older oak. It was matured in 15% new French oak and the balance 3 and 4 year old French oak barriques for 12 months. This has given a hint of oak but still allowing the fruit to dominate. Notes from the winery.
