"Wendouree Cabernet Sauvignon derives from the cool central and western areas of the historic Wendouree vineyard. The soils are shallow and meagre with red loam over 'skilly' limestone. A vertical shoot positioning trellising system has been introduced to optimise sunlight and to protect the fruit from ultra violet light. Natural cultivation practices are the norm. The vines are dry-land farmed with no supplementary irrigation. The cooler central block with its smaller berries is known for its "spicy characters and very firm almost astringent tannins". The western side brings "floral" notes and a softer structure. Winemakers Lita and Tony Brady, together with longstanding consultant Stephen George, make a wine that profoundly articulates the individual character of this unique and important vineyard site. There is a strong belief that "good practice over time permeates both a reputation and a place." After vinification in open fermenters, the wine completes fermentation and remains in stainless steel until November before maturation in around 25% new and seasoned Seguin Moreau French oak for 12 months. This is a muscular cellaring style with fragrant dark chocolate/ cassis/ herb aromas, superb volume, fine strong sinewy tannins and underlying savoury oak. Wendouree Cabernet Sauvignon reflects an enduring winemaking philosophy that allows the wine to speak of itself. The sheer physicality of winemaking is hardly laissez faire but there is a strong belief that "manipulation eradicates vineyard character".
