Nest Egg is the name given to an elite group of Bird in Hand wines selected from exceptional parcels of fruit. Tiny parcel of 100% handpicked pinot noir from the cool 2006 vintage…1 hr on skins gives the wine a delicate rose colour. Method champenoise and extended lees maturation imparts freshly baked bread and roasted chestnut characters. Champagne House Louis Roederer were involved in this joint venture early on as they were convinced of the regions potential to make outstanding bubbles due to climatic similarities to Champagne.
